Strawberry and Mint Dairy Free Panna Cotta
A super simple and light dessert. Add fruit on top when you serve.
Ingredients
- 1 can reduced fat coconut milk
- 80g fresh strawberries, chopped
- 1/2 tbsp gelatin
- 6 large mint leaves
- 1 tbsp honey
- 1 tsp vanilla paste/extract
Directions
- Pop all ingredients in a pan and slowly bring up the heat, do not boil.
- Once almost hot, blend with a hand blender, or carefully pour into a blender.
- Blend until smooth.
- Pour into 4 glasses and allow to set in the fridge for at least 1 hour.
