Strawberry and Mint Dairy Free Panna Cotta

A super simple and light dessert. Add fruit on top when you serve.


  • 1 can reduced fat coconut milk
  • 80g fresh strawberries, chopped
  • 1/2 tbsp gelatin
  • 6 large mint leaves
  • 1 tbsp honey
  • 1 tsp vanilla paste/extract


  • Pop all ingredients in a pan and slowly bring up the heat, do not boil.
  • Once almost hot, blend with a hand blender, or carefully pour into a blender.
  • Blend until smooth.
  • Pour into 4 glasses and allow to set in the fridge for at least 1 hour.
