Sweet Potato and Bacon Hash

A great hash recipe to use up any sweet potatoes.

Ingredients

  • 4 slices of bacon
  • 1 tsp olive oil
  • 420g sweet potato, peeled and chopped into small chunks
  • 1/2 onion, chopped
  • 1 tsp paprika
  • 60g kale
  • 1 tsp parsley
  • 80g avocado, chopped
  • 2 eggs

Directions

  • Cook the bacon under a hot grill. Once cooked, put it to the side and chop into small pieces.
  • Pop the oil, sweet potato, and onion into a deep pan and fry on high heat for 4 minutes.
  • Add the paprika and turn the heat down and place on a lid. Cook for 20 minutes or until the potato is soft, stirring every few minutes.
  • Add the kale and bacon and stir until the kale is wilted and cooked. Add the parsley and mix well.
  • Poach your eggs for 4 minutes in a pan of boiling water with a splash of vinegar.
  • Mix the avocado in with your hash and serve onto 2 plates.
  • Top each with a poached egg and season with salt and pepper.
