Sweet Potato and Bacon Hash
A great hash recipe to use up any sweet potatoes.
Ingredients
- 4 slices of bacon
- 1 tsp olive oil
- 420g sweet potato, peeled and chopped into small chunks
- 1/2 onion, chopped
- 1 tsp paprika
- 60g kale
- 1 tsp parsley
- 80g avocado, chopped
- 2 eggs
Directions
- Cook the bacon under a hot grill. Once cooked, put it to the side and chop into small pieces.
- Pop the oil, sweet potato, and onion into a deep pan and fry on high heat for 4 minutes.
- Add the paprika and turn the heat down and place on a lid. Cook for 20 minutes or until the potato is soft, stirring every few minutes.
- Add the kale and bacon and stir until the kale is wilted and cooked. Add the parsley and mix well.
- Poach your eggs for 4 minutes in a pan of boiling water with a splash of vinegar.
- Mix the avocado in with your hash and serve onto 2 plates.
- Top each with a poached egg and season with salt and pepper.
