Sweet Potato Granola

This granola is delicious. It’s crunchy with a sweet, spiced flavour and goes really well with milk or yoghurt, or even make a smoothie and pour into a bowl and top with this granola and fresh fruit.

Ingredients

  • 300g oats
  • 140g cooked sweet potato, blended until smooth
  • 100g coconut oil
  • 70g maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp mixed spice
  • 1/4 tsp salt
  • 1 tsp vanilla paste
  • 120g pecans, chopped
  • 80g pumpkin seeds

Directions

  • Preheat oven to 180°C.
  • Pop some baking paper into a roasting dish and add the oats. Bake in the oven for 10-15 minutes, until slightly fragrant.
  • Blend together the sweet potato, coconut oil, maple syrup, cinnamon, ginger, mixed spice, salt, and vanilla until smooth.
  • Place the oats into a large bowl, add the pecans, pumpkin seeds, and blended sweet potato mix and stir well until everything is evenly coated.
  • Spread this mixture out onto the same baking sheet you used for the oats and flatten slightly.
  • Bake in the oven for 30-40 minutes, checking on it every 10 minutes, stirring and breaking it up each time.
  • Let it cool completely and store in an air tight container.
