Sweet Potato Pancakes

Sounds strange but they taste amazing, a lot like cakes! Very very nice. They tend to stay quite thick which is lovely.

Ingredients

  • 160g mashed cooked sweet potato
  • 200g almond flour
  • 2 large eggs
  • 60ml almond milk
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 40g unflavored whey protein powder
  • 1 tsp coconut oil

Directions

  • Mix together the sweet potato, almond flour, eggs, milk, baking powder, vanilla extract, cinnamon, nutmeg, and protein powder in a blender until well combined. The mixture is meant to be thick.
  • Heat up a non-stick frying pan and add the coconut oil. This mixture works best in small amounts as it is easier to flip.
  • Spoon the mixture in small amounts into the pan, around 2 inches wide.
  • Cook until the edges are dry and the bottom is browned, carefully flip and pat flat with your spatula.
  • Cook until the other side has browned. Serve.
  • These go really well with yogurt and berries/fruit.
