Sweet Potato Pancakes
Sounds strange but they taste amazing, a lot like cakes! Very very nice. They tend to stay quite thick which is lovely.
Ingredients
- 160g mashed cooked sweet potato
- 200g almond flour
- 2 large eggs
- 60ml almond milk
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 40g unflavored whey protein powder
- 1 tsp coconut oil
Directions
- Mix together the sweet potato, almond flour, eggs, milk, baking powder, vanilla extract, cinnamon, nutmeg, and protein powder in a blender until well combined. The mixture is meant to be thick.
- Heat up a non-stick frying pan and add the coconut oil. This mixture works best in small amounts as it is easier to flip.
- Spoon the mixture in small amounts into the pan, around 2 inches wide.
- Cook until the edges are dry and the bottom is browned, carefully flip and pat flat with your spatula.
- Cook until the other side has browned. Serve.
- These go really well with yogurt and berries/fruit.
