An easy dish which is great for breakfast, lunch or dinner, hot or cold.

Ingredients

  • 120g brown basmati rice
  • 100g green beans, chopped
  • 4 medium eggs
  • 1 tsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, finely chopped
  • 1 green chilli, seeds removed, finely chopped
  • 1 tsp curry powder
  • 1 tsp turmeric
  • 2 bay leaves
  • 100g spinach
  • 2 tbsp tamari sauce
  • 1 lemon, cut into wedges
  • Fresh coriander, chopped, to serve

Directions

  • Cook the rice according to instructions, drain well.
  • Steam or boil the green beans for 8 minutes, set aside.
  • Boil the eggs in hot water for 10 minutes. Leave in a pan of cool water.
  • In a large frying pan, add the oil, onion, garlic, and chilli and cook for a few minutes.
  • Add the curry powder, turmeric, bay leaves, and spinach and mix until the spinach wilts.
  • Add the green beans, rice, and tamari sauce and mix well.
  • Peel the eggs and quarter.
  • Serve the rice onto 2 plates and top with egg, lemon wedges, and fresh coriander.
