Vedgeree
An easy dish which is great for breakfast, lunch or dinner, hot or cold.
Ingredients
- 120g brown basmati rice
- 100g green beans, chopped
- 4 medium eggs
- 1 tsp olive oil
- 1 onion, chopped
- 2 garlic cloves, finely chopped
- 1 green chilli, seeds removed, finely chopped
- 1 tsp curry powder
- 1 tsp turmeric
- 2 bay leaves
- 100g spinach
- 2 tbsp tamari sauce
- 1 lemon, cut into wedges
- Fresh coriander, chopped, to serve
Directions
- Cook the rice according to instructions, drain well.
- Steam or boil the green beans for 8 minutes, set aside.
- Boil the eggs in hot water for 10 minutes. Leave in a pan of cool water.
- In a large frying pan, add the oil, onion, garlic, and chilli and cook for a few minutes.
- Add the curry powder, turmeric, bay leaves, and spinach and mix until the spinach wilts.
- Add the green beans, rice, and tamari sauce and mix well.
- Peel the eggs and quarter.
- Serve the rice onto 2 plates and top with egg, lemon wedges, and fresh coriander.
