Vegan Hash
A lovely breakfast with a great flavour. Add more cayenne pepper if you like a bit of spice in the morning. For non- vegans, this also goes really well with chorizo or topped with a poached egg.
Ingredients
- 400g new potatoes, chopped into small bite-sized chunks
- 1 onion, sliced
- 2 garlic cloves, finely chopped
- 1 tbsp olive oil
- 80g mushrooms, chopped
- 100g courgette, chopped
- 100g black beans (canned), rinsed
- 1 tsp paprika
- 1/4 tsp cayenne pepper
- 1 tsp cumin
Directions
- In a pan, place the potatoes, onion, garlic, and oil and mix well.
- Cook for 15 minutes with a lid on, stirring occasionally.
- Add all other ingredients and stir well.
- Cook with the lid on for 5 more minutes, then remove the lid and continue cooking for a few minutes.
- Serve onto 2 plates.
