Vegan Hash

A lovely breakfast with a great flavour. Add more cayenne pepper if you like a bit of spice in the morning. For non- vegans, this also goes really well with chorizo or topped with a poached egg.

Ingredients

  • 400g new potatoes, chopped into small bite-sized chunks
  • 1 onion, sliced
  • 2 garlic cloves, finely chopped
  • 1 tbsp olive oil
  • 80g mushrooms, chopped
  • 100g courgette, chopped
  • 100g black beans (canned), rinsed
  • 1 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1 tsp cumin

Directions

  • In a pan, place the potatoes, onion, garlic, and oil and mix well.
  • Cook for 15 minutes with a lid on, stirring occasionally.
  • Add all other ingredients and stir well.
  • Cook with the lid on for 5 more minutes, then remove the lid and continue cooking for a few minutes.
  • Serve onto 2 plates.
