Vegan Pancakes

Some lovely vegan pancakes. They go with a variety of fruits so feel free to add any fruits you like.


  • 1 ripe banana (120g), mashed
  • 60g spelt flour
  • 1/2 tsp baking soda
  • 1 tsp lemon juice
  • 180ml unsweetened cashew milk
  • 1/2 tsp cinnamon
  • 1 tsp coconut oil
  • 140g strawberries, sliced
  • 2 tbsp coconut yogurt
  • 2 tbsp maple syrup


  • Blend together the banana, spelt flour, baking soda, lemon juice, milk, and cinnamon until it’s a nice smooth batter.
  • Heat a frying pan to medium/high heat and add the coconut oil.
  • Spoon in the batter into small pancakes, this mixture should make 8.
  • Cook for around 3-4 minutes until the bottom is golden, then carefully flip each one over and cook for a further 2 minutes or until golden.
  • Serve in a stack with strawberries in each layer.
  • Pop the yoghurt and maple syrup on the top.
