Vegan Pancakes
Some lovely vegan pancakes. They go with a variety of fruits so feel free to add any fruits you like.
Ingredients
- 1 ripe banana (120g), mashed
- 60g spelt flour
- 1/2 tsp baking soda
- 1 tsp lemon juice
- 180ml unsweetened cashew milk
- 1/2 tsp cinnamon
- 1 tsp coconut oil
- 140g strawberries, sliced
- 2 tbsp coconut yogurt
- 2 tbsp maple syrup
Directions
- Blend together the banana, spelt flour, baking soda, lemon juice, milk, and cinnamon until it’s a nice smooth batter.
- Heat a frying pan to medium/high heat and add the coconut oil.
- Spoon in the batter into small pancakes, this mixture should make 8.
- Cook for around 3-4 minutes until the bottom is golden, then carefully flip each one over and cook for a further 2 minutes or until golden.
- Serve in a stack with strawberries in each layer.
- Pop the yoghurt and maple syrup on the top.
