Vegetable Frittata
This is a simple recipe which can be adapted using a variety of vegetables you like throughout the year. Also good to batch cook if you are going to be busy.
Ingredients
- 1 tsp olive oil
- 1 onion, sliced
- 1 red pepper, cored and sliced
- 100g kale, chopped
- 60g spring greens, chopped
- 12 medium eggs
- 1 tbsp freshly chopped parsley
Directions
- Preheat oven to 200ยฐC and line a loaf tin with baking paper.
- In a frying pan add the oil and onion and cook on a high heat for a few minutes.
- Add the red pepper and cook for a few more minutes.
- Add the kale and spring greens and stir until they wilt and reduce in size.
- In a large bowl add the eggs and parsley and season with salt and pepper. Beat.
- Add the veg and stir and then pour the mixture into the loaf tin.
- Cook in the oven for 45-60 minutes until golden and when pressing a knife into the middle, nothing runny comes out.
- Serve hot or cold.
