Vegetable Frittata

This is a simple recipe which can be adapted using a variety of vegetables you like throughout the year. Also good to batch cook if you are going to be busy.


  • 1 tsp olive oil
  • 1 onion, sliced
  • 1 red pepper, cored and sliced
  • 100g kale, chopped
  • 60g spring greens, chopped
  • 12 medium eggs
  • 1 tbsp freshly chopped parsley


  • Preheat oven to 200°C and line a loaf tin with baking paper.
  • In a frying pan add the oil and onion and cook on a high heat for a few minutes.
  • Add the red pepper and cook for a few more minutes.
  • Add the kale and spring greens and stir until they wilt and reduce in size.
  • In a large bowl add the eggs and parsley and season with salt and pepper. Beat.
  • Add the veg and stir and then pour the mixture into the loaf tin.
  • Cook in the oven for 45-60 minutes until golden and when pressing a knife into the middle, nothing runny comes out.
  • Serve hot or cold.
