Winter Greens Soup
A great soup to make if you have a lot of green veg left in your fridge.
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, chopped
- 120g leeks, chopped
- 2cm piece of fresh ginger, chopped
- 80g frozen peas
- 230g broccoli florets
- 100g kale, chopped
- 200g chard, including stems, chopped
- 1 can coconut milk
- 750ml vegetable stock
- 1/2 tsp cayenne pepper
- 1/2 tsp salt
- 1/2 tsp black pepper
- Juice from 1 lemon
Directions
- In a large frying pan on high heat, add the oil, onions, garlic, and leek and cook for 4 minutes, stirring constantly.
- Add all other ingredients and bring to a boil, stirring the vegetables around. It will seem over packed, but the kale and chard will soon shrink.
- Turn the heat down and simmer for 10 minutes.
- Once cooked, blend everything either in the pan with a hand blender or transfer to a blender in batches and blend until smooth.
- You can top your soups too if you like. Nuts and seeds work well and add a little crunch.
