Winter Greens Soup

A great soup to make if you have a lot of green veg left in your fridge.


  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 120g leeks, chopped
  • 2cm piece of fresh ginger, chopped
  • 80g frozen peas
  • 230g broccoli florets
  • 100g kale, chopped
  • 200g chard, including stems, chopped
  • 1 can coconut milk
  • 750ml vegetable stock
  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Juice from 1 lemon


  • In a large frying pan on high heat, add the oil, onions, garlic, and leek and cook for 4 minutes, stirring constantly.
  • Add all other ingredients and bring to a boil, stirring the vegetables around. It will seem over packed, but the kale and chard will soon shrink.
  • Turn the heat down and simmer for 10 minutes.
  • Once cooked, blend everything either in the pan with a hand blender or transfer to a blender in batches and blend until smooth.
  • You can top your soups too if you like. Nuts and seeds work well and add a little crunch.
