Banana Pancakes Recipe

Ingredients

  • 1 Large banana (for Low Fodmap diet please use unripe banana)
  • 3 eggs
  • 15g protein powder (optional, use to stick to the below macros)
  • 1 tsp coconut oil
  • 1.5 tbsp honey

Directions

  • In a blender place in the banana, eggs and protein powder (if using) and blend until smooth.
  • Heat up a frying pan on med/high heat and place in the coconut oil.
  • Run the liquid into a pan (it should make 2 pancakes) and cook with a lid on (or use foil to cover) until the liquid in the middle is set and the bottom is golden.
  • Then turn over and cook until that side is golden.
  • Repeat until the mixture is gone. Serve and run the honey over them.
