Beef Kofta Curry Recipe

Ingredients

  • 1 tsp garam masala
  • 100g lean minced beef
  • 2 tsp coconut oil
  • 1 small tomato
  • 3cm cubed piece of ginger, peeled
  • 2 spring onions, trimmed
  • 1 small red chilli de seeded
  • ½ bunch fresh coriander
  • 1 tsp turmeric
  • 1 tsp Rogan Josh curry paste
  • 110ml canned coconut milk
  • 1 lemon
  • 30g green beans
  • 20g frozen peas

Directions

  • In a bowl, place the garam masala and minced beef. Season with salt and pepper and using your hands mash it all together. Mould the mixture into fat fingers to make the koftas. Place in a deep frying pan with the coconut oil and cook until each side is golden.
  • In a food processor, add in the tomato, ginger, spring onions, chilli, coriander (save some leaves to decorate), turmeric, curry paste and coconut milk. Blend until smooth and then add to the kofta pan. Season to taste. Cook until koftas are cooked.
  • Put the green beans and peas into a small pan and cover with boiling water, cook for around 5 minutes and drain.
  • Serve the koftas with the veg with lemon wedges on the side.
