Cinnamon and Coconut Pancakes Pancakes Recipe

Ingredients
- 2 large eggs
- 45ml coconut milk (3 tbsp)
- ½ mashed banana
- ½ tsp cider vinegar
- ½ tsp vanilla extract
- 40g coconut flour (1 ½ tbsp)
- ½ tsp cinnamon
- pinch salt
- 30g protein powder (optional, add if sticking to below macros)
- 10 raspberries
- 3 medium strawberries
- 15 blueberries
- 1 tbsp honey
- 1tsp coconut oil
Directions
- Mix together the eggs, coconut milk, banana, vinegar and vanilla in a bowl. Then add the flour stirring constantly and also the cinnamon, salt and protein powder if adding. You can add more milk if it goes too thick (1 tbsp. at a time).
- Heat the coconut oil in a non-stick frying pan and add the mixture. You can make little or large pancakes, I find little ones are easier to flip. After putting the desired amount of mixture into a pan, wait until you see bubbles form on the top and then flip the pancakes over and cook until browned on the other side.
- Serve with fruit and drizzle the honey on top. Also goes well with yogurt.
