Pina Colada Pancakes Recipe

SERVES 3

Ingredients

  • 3 medium eggs
  • 250ml coconut milk (for SCD diet please use home made coconut milk)
  • 2 tsp vanilla extract
  • 60g coconut flour
  • 40g protein powder (optional, use if wanting to hit below macros)
  • 1/8 tsp salt
  • 50g desiccated coconut
  • 175g pineapple
  • 1 tsp coconut oil

Directions

  • Using a blender, blend together the eggs, coconut milk, vanilla, coconut flour, protein powder (if using) and salt until well combined. Add in the shredded coconut and blend again. You can use some more milk if you need to in case this goes too thick but the mixture should be quite thick.
  • Heat up a non-stick frying pan and add the coconut oil. This mixture works best in small amounts as it is easier to flip. Spoon the mixture in small amounts into the pan. Cook until the edges are dry and the bottom is browned, carefully flip and cook until the other side has browned. Serve with fresh pineapple and sprinkle over desiccated coconut. Also works well served with yogurt.
