Pomegranate and Lentil Salad Recipe

SERVES 3

Ingredients

  • 1 can brown lentils (bijoux works well), drained and rinsed
  • ½ avocado, chopped
  • 3 handfuls spinach, washed
  • handful walnuts, chopeed
  • 1 apple, cored and chopped into small chunks
  • 2 handfuls pomegranate
  • 1 stick celery, sliced lengthways then chopped

Dressing

  • 1.5 tbsp tahini
  • 1 tbsp olive oil
  • 1 clove garlic
  • 2 tbsp fresh orange juice
  • 1 tsp orange zest
  • 1 tbsp lemon juice
  • salt and pepper to season

Directions

  • Place all salad ingredients into a bowl and mix.
  • Blend together the dressing ingredients and add to your salad bowl and give it another mix.
  • There, good to go!
