Pomegranate and Lentil Salad Recipe
SERVES 3
Ingredients
- 1 can brown lentils (bijoux works well), drained and rinsed
- ½ avocado, chopped
- 3 handfuls spinach, washed
- handful walnuts, chopeed
- 1 apple, cored and chopped into small chunks
- 2 handfuls pomegranate
- 1 stick celery, sliced lengthways then chopped
Dressing
- 1.5 tbsp tahini
- 1 tbsp olive oil
- 1 clove garlic
- 2 tbsp fresh orange juice
- 1 tsp orange zest
- 1 tbsp lemon juice
- salt and pepper to season
Directions
- Place all salad ingredients into a bowl and mix.
- Blend together the dressing ingredients and add to your salad bowl and give it another mix.
- There, good to go!
