Quinoa Pancakes Recipe

Quinoa Pancakes? Yes, they’re actually really good and set well when cooking. Make your own flour, it’s literally blended dry quinoa. That simple. Now go try them.

SERVES 4

Ingredients

  • 200g quinoa flour (I explain how to make)
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 300ml almond/coconut milk
  • 4 eggs
  • 15g butter
  • 200g coconut yoghurt
  • 100g blueberries
  • 2 tsp coconut oil

Directions

  • To make quinoa flour, simply grind down dry quinoa until flour texture. You can use your nutri bullet, a food processor or even a coffee grinder to do this.
  • Mix the quinoa flour, baking soda and salt together in a bowl. Stir in the milk, eggs and butter until you get a smooth, thin batter.
  • In a hot frying pan, add 1 tsp of oil and pour in around 4 tbsp of batter per pancake.
  • Cook until bubbles form on the top and it looks set and then flip and cook until browning on the other side. Continue doing this until all the batter is gone.
  • Add the yoghurt and blueberries on top and enjoy.
