Almond and Plum Cake
A great gluten free cake using ground almonds (almond flour) and plums. The plums keep the cake nice and moist. Goes great with ice cream or custard too.
Ingredients
- 200g ground almonds
- 4 medium eggs
- 100g maple syrup
- 2 tsp vanilla paste (or essence)
- 1 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 5 plums, cut in halves, stones removed
Directions
- Preheat oven to 180°C.
- Line an 8-inch cake pan with baking paper and grease with coconut oil.
- In a bowl, mix the ground almonds, eggs, maple syrup, vanilla, baking powder, cinnamon, and salt together until well combined and smooth.
- Place the plums in the bottom of the cake tin.
- Pour the batter over the top.
- Pop it in the oven for around 40 minutes to 1 hour or until golden brown, and a knife when inserted in the centre comes out clean.
