Almond and Plum Cake

A great gluten free cake using ground almonds (almond flour) and plums. The plums keep the cake nice and moist. Goes great with ice cream or custard too.


  • 200g ground almonds
  • 4 medium eggs
  • 100g maple syrup
  • 2 tsp vanilla paste (or essence)
  • 1 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 5 plums, cut in halves, stones removed


  • Preheat oven to 180°C.
  • Line an 8-inch cake pan with baking paper and grease with coconut oil.
  • In a bowl, mix the ground almonds, eggs, maple syrup, vanilla, baking powder, cinnamon, and salt together until well combined and smooth.
  • Place the plums in the bottom of the cake tin.
  • Pour the batter over the top.
  • Pop it in the oven for around 40 minutes to 1 hour or until golden brown, and a knife when inserted in the centre comes out clean.
