Almond and Sultana Pancakes

Great pancakes with lots of flavour. They are just sweet enough with the addition of the sultanas.


  • 250ml unsweetened almond milk
  • 3 medium eggs
  • 150g almond flour
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp olive oil
  • 2 tbsp sultanas
  • 1 tbsp honey


  • Blend the milk, eggs, flour, cinnamon, and nutmeg together in a blender.
  • Heat up the oil in a non-stick frying pan until hot. Place the mixture in small batches, 2 tbsp a pancake, and drop a few sultanas onto the pancakes.
  • Cook until bubbles form and the bottom is brown, then flip over and cook until browned on the other side. Repeat until the mixture is gone.
  • Top with a drizzle of honey.
