Almond and Sultana Pancakes
Great pancakes with lots of flavour. They are just sweet enough with the addition of the sultanas.
Ingredients
- 250ml unsweetened almond milk
- 3 medium eggs
- 150g almond flour
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp olive oil
- 2 tbsp sultanas
- 1 tbsp honey
Directions
- Blend the milk, eggs, flour, cinnamon, and nutmeg together in a blender.
- Heat up the oil in a non-stick frying pan until hot. Place the mixture in small batches, 2 tbsp a pancake, and drop a few sultanas onto the pancakes.
- Cook until bubbles form and the bottom is brown, then flip over and cook until browned on the other side. Repeat until the mixture is gone.
- Top with a drizzle of honey.
