Apple and Pear Loaf
A really great moist cake that’s great with a cuppa. Making cakes as loafs are so easy to slice and store in the freezer for a rainyday!
Ingredients
- 170g oats, blended into flour
- 170g ground almonds
- 1 tsp bicarbonate of soda
- 2 medium eggs, separated
- 100g honey
- 70g butter, melted or really soft
- 60 ml coconut milk (or any milk)
- 1 tsp vanilla paste
- 1 apple, core removed, grated
- 120g poached pear, chopped
- Mixed nuts, crushed for topping
Directions
- Preheat the oven to 180°C. Line a loaf tin with baking paper.
- Mix together the oat flour, ground almonds, and bicarb.
- In a separate bowl whisk together the yolks and honey until light and fluffy. Add the milk, butter, and vanilla and mix well.
- Add the wet mix to the dry and mix well.
- Beat the egg white in a bowl until you form stiff peaks.
- Fold in the grated apple, pear, and egg whites to the main mix and then pour into your loaf tin.
- Sprinkle the nuts on the top.
- Bake in the oven for 45 minutes or until a knife when inserted in the middle comes out clean.
- When ready, remove from the oven and take out of the tin and leave to cool to room temperature on a cooling rack.
