Apple Pear and Berry Crumble
One of our go to desserts as itโs easy to bash together. Try and use whatever seasonal fruit is around.
Ingredients
- Fruit layer
- 2 apples, peeled, cored & chopped
- 2 pears, peeled, cored & chopped
- 150g mixed frozen berries
- 2 tbsp maple syrup
- 1/2 tsp cinnamon
- 1.2 tsp ground ginger
- Crumble
- 120g ground almonds
- 40g desiccated coconut
- 80g rolled oats
- 50g coconut oil – room temp
- 2 tbsp maple syrup
- 1/2 tsp cinnamon
Directions
- Preheat oven to 180ยฐC.
- Pop all fruit layer ingredients into a pan on medium heat and stir.
- Bring to the boil, then turn down the heat and pop a lid on and simmer for 10 minutes until nicely stewed, giving it a stir every few minutes.
- Pop the fruit layer into a small roasting dish.
- To make the crumble pop all crumble ingredients into a bowl.
- The coconut oil can be melted or room temperature, doesnโt really make a difference.
- Mix everything together by hand using your fingers to mix and squish it all together.
- Make sure it stays crumbly and not turn into a dough. If itโs too doughy, just add some more of a dry ingredient like ground almonds or oats.
- Place the crumble on top of the fruit layer, covering it all.
- Bake in the oven for 20 minutes, or until the crumble is nicely golden.
- Remove from the oven and serve. Goes really well with cream or a custard.
